Fluffy Omelette

​Ingredients:

2 eggs, separated

 salt, pepper, cayenne

whatever you want to fill it with

Instructions:

  1. Prep veggies or whatever you plan on using to fill your omelette.

  2. Separate eggs. Beat egg whites until they are airy.

  3. Whisk egg yolks with seasoning and fold in whipped egg whites.

  4. Heat a skillet over low heat and add a little oil or butter. Pour in egg mixture and let set on low with a lid. 

  5. Whent he edges start to looked cooked but the center is still wet, add toppings to one half of the omelette surface and cheese to the other half.

  6. Return lid and continue to cook on low until surface looks set.

  7. Flip cheese side over the top and serve.
