Fish in Serrano Cream
Ingredients:
white fish like halibut or cod
flour
eggs
salt, pepper & cayenne
pepitas or pecans, chopped up fine
oil and butter for frying
Cream:
2 tbl butter
1/4 cup minced shallot
1 tsp minced serrano pepper
1 cup heavy cream
1 cup chopped cilantro
Instructions:

Season fish with salt, pepper and cayenne

In a shallow dish, prepare flour. In a second dish, whisk eggs. Add crushed pepitas or pecans to a third dish

Coat fish on both sides in flour and shake off excess. Dip one side of fish into eggs and then into crushed nuts, press lightly.

Repeat with each piece of fish and set on a plate (seed side up), cover loosely and refrigerate for about 15 minutes.

Prepare serrano cream: melt butter in saucepan and add shallot and pepper. Saute for a few minutes.

Put cream, cilantro and shallot/pepper mixture into a blender; blend on low until it turns a luscious green.

Return to pan and bring to a low simmer, season to taste and reduce to about half

Fry fish in olive oil and butter, seed side first and serve with serrano cream.
