Fish Bruschetta

Ingredients:

French baguette

olive oil

4 oz canned fish like trout or sardines or use leftover fish.

2 plum tomatoes

8 to 10 kalamata olives

1/2 red onion

1 T mayonaise

fresh basil leaves

Instructions:

  1. If using canned fish - rinse thoroughly

  2. Chop fish, tomato, olives and onion in to small pieces. Chiffonade basil and add to mixture. 

  3. Mix in mayo - just enough to bring it together. Refrigerate until ready to use.

  4. Cut baguette in diagonal slices, brush both sides with olive oil. Grill on high to toast both sides.

  5. Top grilled baguette with fish mixture.

NOTE: there is no need for added salt.
