Farro Salad

Ingredients:

1 cup whole grain farro

2 cups broth

arugula

green apple, sliced thin

slivered, toasted almonds

shaved parmesan

olive oil

balsamic vinegar

Instructions:

  1. Rinse farro and set aside. In a sauce pan, bring broth to a boil. Add farro and simmer 30 minutes. Drain off excess liquid.

  2. Lightly dress arugula with olive oil and balsamic vinegar.

  3. Toss cooled farro with arugual, apple, and almonds. Top with shaved parm.
