Noodle Salad

Ingredients:

thin speghetti

sugar snap peas

red bell peppers

scallions

basil and/or mint

 

Dressing:  

½ cup olive oil

2 tbl rice wine vinegar

2 1/2 tbl soy sauce

1 1/2 tbl sesame oil

1/2 tbl honey

1 garlic clove minced

1/2 tsp fresh ginger, minced

2 tbl toasted sesame seeds

1/4 cup peanut butter

Instructions:

  1. Cook spaghetti until al dente, drain and set aside.

  2. Mix dressing ingredients to taste.

  3. Toss all ingredients together; serve right away (room temp) or chill.
