Corn & Bean Salad

Ingredients:

large shrimp, shelled and deveined

olive oil

butter

garlic, minced

salt, pepper, ceyenne, smoked paprika

corn, grilled on the cob and cut off the cob

black beans, drained and rinsed

onion, chopped

jalapeno, chopped

cilantro, chopped

Dressing: 

good olive oil

fresh squeezed lime juice

sugar

Instructions:

  1. Grill the corn until slightly charred. Let cool, and cut kernels off the cob.

  2. Season shrimp with salt, pepper, cayenne and smoked paprika. Stir fry in garlic and butter and a little olive oil (or grill).  Let cool, and slice in half crosswise.

  3. Combine the corn, beans, jalapeno, onion, shrimp, cilantro and season with pepper and sea salt.

  4. Whisk together olive oil, lime juice and sugar to taste. Drizzle over salad and gently toss to combine. Chill  before serving.
