Grilled Pineapple w/Rum Sauce

Ingredients

1 pineapple

olive oil

1 tbl butter

1/4+ cup brown sugar

1/4+ cup dark rum

vanilla ice cream

 

Instructions

  1. Cut pineapple into rings, about 1/2-inch each. Cut out the core of each ring.

  2. Lightly brush olive oil over pineapple rings and grill pineapple a couple minutes on each side until you nice grill marks.

  3. Combine butter, sugar and rum over a low heat until the sugar is dissolved.

  4. Serve pineapple topped with ice cream and drizzled with rum sauce.
