Green Veg & Mushroom

Ingredients: 

green beans

asparagus

cremini mushrooms (or an assortment)

onion

jalapeno

garlic 

salt & pepper

butter & olive oil

Instructions:

  1. Clean, trim and cut beans into bite-size pieces. Hold back a few fat beans and extract the inner bean from the pod.

  2. Cook beans in pods in boiling water just to al dente, dip into cold water and set aside to drain.

  3. Quick saute inner beans in just a touch of butter then set aside.

  4. Saute mushrooms, jalapeno and onion in butter and a little olive oil. Once they are browned add asparagus and seasoning, cook for 2 minutes. 

  5. Add beans and re-warm.

  6. Put in serving bowl and top with inner beans. Ready to serve!
