Italian Stuffed Potatoes

Ingredients: 

russet potatoes

Italian sausage

red, green, yellow bell peppers, sliced

onion, sliced

butter

salt & pepper

Instructions:

  1. Pierce potato several times with a fork or sharp knife; smear with butter or oil. Bake in oven at 400 degrees until cooked through - about an hour.

  2. Cook sausage and set aside.​

  3. Saute peppers and onion in butter and season with salt and pepper.

  4. Carefully scoop the middle out of the baked potato and mix with butter, salt and pepper.

  5. Spoon potato mixture into the bottom of the potato shell.

  6. Lay sausage on next and top with peppers and onions.
