Tuscan Salmon

Ingredients:

salmon (or halibut)

1 shallot, diced

2 cloves garlic, minced

anchovy paste or fish sauce

grape tomatoes

sundried tomatoes

3/4 cup veggie broth

1 can cannalini beans, rinsed

lg handful spinach

1/4 cup basil

1/4 cup sour cream

1/3 cup grated fresh parm

salt, pepper

lemon pepper

cayenne pepper

olive oil 

butter

Instructions:

  1. Season salmon with lemon pepper and fry in olive oil and butter. Take out before completely cooked and set aside.

  2. In the same pan, (add a little butter if needed) sautee shallots, garlic, anchovy paste, salt, pepper, cayenne, sundried tomatoes and grape tomatoes for just a minute or two to release flavors. 

  3. Add broth and beans and bring to a simmer. 

  4. Add sour cream, parm, basil, spinach and bring to simmer.

  5. Add fish and cook until spinach is wilted and fish is warmed through.
