Rice Noodle Soup

Ingredients:​

carrots

red bell pepper

celery

onion

garlic

ginger

ground pork

chicken broth

rice noodles

napa cabbage

soy sauce

Instructions:

  1. Cook rice noodles to al dente, then set aside.

  2. In a large Dutch oven, brown pork in just a little olive oil. Transfer pork to a bowl and set aside.

  3. Add a little olive oil and butter to the same pot where pork was browned. Add onion, celery, carrot and bell pepper. Season with salt, pepper and cayenne.

  4. Add garlic, ginger and a splash of soy sauce; cook for another minute or two.

  5. Add broth, pork and cabbage. Cook through, just until cabbage begins to soften. 

  6. Serve with noodles.
