Sausage Bean Stew

Ingredients:

Italian sausage (link or ground)

1/2 large onion, diced

2 carrots, diced

3 stalks celery, diced

salt & pepper

cayenne

smoked paprika

1 clove of garlic, minced

2 cans cannellini beans

6 cups chicken stock​

14 oz can crushed tomatoes

1/2 cup cooked ditalini pasta

2 Tbl Italian parsley​

Instructions:

  1. Cook sausage into a Dutch oven; let cool slightly and cut into bite-size pieces; set aside.

  2. To the same pot, add a little butter and/or olive oil. Add onion, celery, carrot and seasoning. Cook and stir over medium heat until softened. Add garlic; cook 1 minute longer.

  3. Stir in the broth and tomatoes. Bring to a boil. (add more broth or water as needed)

  4. Reduce heat; add beans and sausage and cook until completely heated through.

  5. Top with pasta and parsley.
