Olive Cheese Bread

Ingredients:

French or Italian baguette

3 oz green olives, sliced or chopped

3 oz black olives, sliced or chopped

2 scallions, chopped

1/2 stick butter, room temp

1/4 cup mayo

6 oz melty cheese like monterey or pepper jack

red pepper flakes

Instructions:

  1. Rinse and slice olives.

  2. Mix together butter, mayo and scallions with a wooden spoon.

  3. Add cheese and olives.

  4. Slice baguette lengthwise and spread mixture on top. Sprinkle with red pepper flakes.

  5. Broil until cheese is melty and edges are crisp. (You can also bake at 325 but the bottoms will get more cooked and can sometimes get tough)
