Melty Sweet Potatoes

Ingredients:

4 tbl butter

2 tsp fresh sage

2 tsp fresh thyme

2 tsp rosemary

sweet potatoes

salt/pepper

1 1/2 cups chicken broth

Optional: marshmallows for topping

Instructions:

  1. Cut sweet potatoes into 1 inch medallions.

  2. Melt some butter in a cast iron pan and brown sweet potatoes. Salt & pepper.

  3. Add 4 tbl butter, seasonings and broth.

  4. Bake at 425 until liquid is reduced and potatoes are cooked through.
