Potato Salad Bites

Ingredients:

3 large potatoes

6 new potatoes

1 hard boiled egg

celery

scallions

dill pickles

mayo

mustard

pickle brine

celery seed

pepper

Instructions:

  1. Bake potatoes until fully cooked. Bring to room temp and chill.

  2. When fully chilled, cut the larger potatoes into small cubes. Cut the new potatoes in half and scoop out the middle.

  3. Make dressing with mayo, mustard, pickle brine, celery seed and pepper.

  4. Mix potato cubes with egg, celery, scallions and pickles and coat with mayo dressing.

  5. Stuff into small potato halves and serve cold.
