Cream Puffs

​FILLING

Ingredients: 

8 oz softened cream cheese

1 small container of Cool Whip

1/2 cup powdered sugar

​

Instructions:

  1. Mix cream cheese, Cool Whip and sugar until well incorporated

  2. Put into piping bag and store in refrigerator until ready to use.

 

 

RASPBERRY COMPOTE

Ingredients:

1 pint (16 oz) raspberries or strawberries

2 Tbl Sugar

Instructions:

  1. Sprinkle sugar over berries and let sit at room temperature for 30 minutes. 

  2. You can also put them in the refrigerator overnight if you are making them ahead.

PASTRY CHOUX

Ingredients:

1 cup sifted flour

¼ cup butter

1 cup water (or 1/2 cup water, 1/2 cup milk)

4-5 eggs

 

Instructions:

  1. Put butter and water in saucepan and just bring to boil

  2. Add flour all at once and stir until it forms a ball

  3. Set aside until partly cool

  4. Add one egg at a time; beating constantly by hand or with mixer. The mixture should slowly roll off of your spoon, if it is good - don't add more egg. If it is not quite there; just an the egg white of the next egg (you can always then add the yoke if needed)

  5. Continue to beat for another 5 minutes

  6. Drop by spoonfuls or pipe on parchment paper about 2 inches apart

  7. Bake at 450 for 10 minutes then reduce heat to 375 and bake 15 minutes more

  8. Let cool and use right away or freeze for up to 1 month. Take out just 1 hour or so before filling.
