Assorted Tarte Tatin

Ingredients:

4 tbl unsalted butter, softened

8 tbl brown sugar

fruit like bananas, apples, peaches, raspberries, blueberries

4  6" rounds of puff pastry 

You'll need: Four 5"-diameter, 1"-high crème brûlée dishes

Instructions:

  1. Place dishes on a rimmed baking sheet. Smear bottom of each dish with 1 tablespoon butter.

  2. Sprinkle each with 2 tablespoons brown sugar.

  3. Overlap slices of fruit over sugar until bottom is covered

  4. Top each dish with 1 puff pastry round, tucking in edges of pastry.

  5. Bake at 400 degrees until pastry is golden and puffed and filling is bubbly, 20-25 minutes.

  6. Invert onto plates.
