Rainbow Hummus

Ingredients:

1 cups of canned chickpeas (drain and reserve liquid)

2 garlic cloves

1 T lemon juice

Red Batch: 2 T beet juice 

Green Batch: 1/2 cup spinach plus 2 T chickpea liquid 

Yellow Batch: 2 T of chickpea liquid & 1 tsp tumeric

olive oil

Instructions:

  1. Process first four ingredients until almost smooth.

  2. Add olive oil to get desired consistency.

  3. Salt to taste

 

Optional: Add Sriracha to make spicy hummus.
