French Baguette
Ingredients:
2 pkg active dry yeast
2 tbl honey
3 1/2 to 4 cups flour
2 tsp salt

Instructions:

Combine honey, yeast with 1/2 cup warm water. Stir and set aside until it gets foamy, about 5 minutes.

Add salt to 2 cups of flour and stir in yeast mixture.

In small increments add more flour up to 2 more cups.

Turn the dough out to a lightly floured surface and knead for 5 to 7 minutes.

Place dough in a lightly greased bowl, over and let rest in a warm area until doubled in size (30 min to an hour)

Punch dough down and divide into two. Shape into baguettes, set on parchment lined baking sheet, cut lightly across the top to score and let rise to double.

Preheat oven to 450 degrees. Place an empty baking sheet on the very bottom rack while preheating.

Place loaves on middle rack and drop 3 or 4 ice cubes on the hot, empty baking sheet. Close door immediately! This will create steam for a crunchy crust.

Bake for about 15 minutes. Cool on a rack.
