Braciole
Ingredients:
2 lbs flank steak
olive oil
1/4 yellow onion
1 clove garlic finely minced
1 egg
4 oz prosciotto
1/4 cup bread crumbs
1/4 cup freshly grated parm
fresh parsley chopped
marinara sauce (see recipe)
fresh basil for garnish
linguini or speghetti; cooked al dente

Instructions:

Cut (or have your butcher cut) the steak into thin slabs; pound to tenderize.

Cook onions until translucent and add garlic at the last minute or so. Set aside to cool.

Make marinara sauce in same pan.

While sauce is cooking down, mix onion mixture with egg, prosciutto, bread crumbs, parm and parsley.

Lay out steak, salt and pepper and cover with egg/cheese mixture.

Roll steak and tie with string.

Sear steak well on all sides.

Pour marinara sauce (reserving about 1 1/2 cups) into baking dish and top with steak rolls. Some choose to cover steak with sauce as well, that is up to your preference.

Cover and bake at 350 degrees for 1 and 1/2 hours.

Serve with spaghetti tossed with reserved marinara. Garnish with basil.
