Mock Chocolate Mousse
Ingredients:
1/2 cup heavy cream
1 cup chopped chocolate (dark, semi-sweet, milk, or white)
Note: The ratio of chocolate to cream is about 2 to 1
heavy pinch of salt
Optional: Substitute some of the cream with bourbon or rum or even coffee

3 cups heavy cream
1 Tble sugar
Optional: splash of bourbon or rum

Ideas: Add strawberries to final topping. Use two or three kinds of chocolate and layer. Add layer of crushed sandwich cookies.
Instructions:

Place chopped chocolate in a mixing bowl and set aside

Warm 1/2 cup heavy cream in a saucepan until scalded (just before boiling).

Pour warm cream over chocolate and let sit for two minutes.

Whisk mixture until creamy smooth.

Beat 3 cups heavy cream with sugar and bourbon until it forms stiff peaks.

Spoon some of the whipped cream into cooled chocolate and put into dessert cups. Just a a little at a time until you have your desired outcome.

Top with remaining whip topping and strawberries.
