Pear Crostini

Ingredients:

French baguette

olive oil

6 oz ricotta

1 tbl lemon zest

1/2 tsp salt

3 tbl honey

pear or melon

prosciutto

Instructions:

  1. Mix ricotta, lemon zest, salt and honey and set aside.

  2. Cut baguette, brush with olive oil and grill or broil.

  3. Crisp up prosciutto by frying in a pan with a little avocado or olive oil. 

  4. Construct crostini: baguette, ricotta mixture, pear or melon and top with torn or crispy prosciutto.

NOTE: I like to add a little cracked pepper to the prosciutto if it is not crisped up and chopped parsley and basil to the crispy prosciutto.
