Jicama Salad

Note: You may notice avocado in the photo. The recipe did call for avocado but I do not like the texture in this particular salad, therefore I did not include it in my recipe.

Ingredients:

jicama

supremed oranges

jalapenos, chopped

cilantro

​

Dressing:

fresh juice of 1 lime

1/4 cup white vinegar

2 tsp honey

1/2 cup olive oil

salt & pepper

Instructions:

  1. Peel jicama and cut into thin matchsticks.

  2. Supreme an orange and reserve juice.

  3. Toss together jicama, cilantro, and jalapenos 

  4. For dressing: first whisk together lime juice, vinegar and honey, salt & pepper. Then drizzle in olive oil while whisking to make vinaigrette.

  5. Toss all together and drizzle on reserved orange juice.
