Larb Gai

Ingredients:

1 lb ground chicken

1/4 cup chicken broth

1 tbl toasted rice powder *

2 tbl fish sauce

1 tbl lime juice

1 tbl chili peppers

cilantro

sliced red onion

napa cabbage (for serving)

cucumber (for serving)

*if you cannot find this to buy, you can make it. Toast raw rice on the stovetop until browned. Cool and then using a mortar and pestle, grind it down to a find powder.

Instructions:

  1. Brown chicken until cooked through.

  2. Add broth, rice powder, fish sauce, lime juice and peppers. Stir and cook until most of the liquid is gone.

  3. Remove from heat and add onion and cilantro. Serve with napa cabbage leaves and cucumbers.
