Chorizo Kale Soup

Ingredients:

1 lb chorizo sausage, casing removed

1 medium onion, chopped

2 cloves of garlic, minced

salt, pepper and cayenne

4 to 6 cups chicken broth

2 large russet potatoes

5 cups kale, stripped off of stem

1 15 oz can cannellini beans

1 15 oz can diced tomatoes

Instructions:

  1. Brown chorizo in soup pot then set aside.

  2. In the same pot, add onion and potatoes and cook with a splash of olive oil and pat of butter for 2 to 3 minutes

  3. Add garlic, salt, pepper and cayenne; stir for 2 or 3 minutes.

  4. Add broth, tomatoes, beans and cook until potatoes are tender.

  5. Turn down heat and add sausage and kale.

  6. Serve when kale is wilted.
