Chocolate Truffles

Ingredients:

1 cup heavy cream

3 cups semi-sweet chocolate, chopped

heavy pinch of salt

Optional: Substitute some of the cream with bourbon or rum or even coffee

For finishing:

toasted coconut

toasted nuts, chopped

candy cane, crushed

powdered sugar

cocoa powder

heath bar, crushed

freeze dried raspberries

...the list goes on...

Instructions:

  1. Place chocolate in a mixing bowl and set aside

  2. Warm cream in a saucepan until scalded (just before boiling).

  3. Pour warm cream over chocolate and let sit for one minute. 

  4. Whisk mixture until creamy smooth; cover and chill for 2 hours to overnight.

  5. Put finishing 'toppings' on individual plates or in shallow bowls.

  6. With a small spoon, take a bite size amount of choc and drop into one of the toppings. Cover and then roll in your hands to make a ball. Repeat :)

  7. Once they are made keep chilled or frozen until serving.
