Chicken Tortilla Soup

Ingredients:

6 c. low sodium chicken broth

â…“ c. flour

1 lg. onion

garlic, minced 

1 can black beans, drained & rinsed

2 Tbsp. paprika

2 tsp. cayenne pepper

salt / pepper

roasted chicken cut into bite size pieces

corn cut off of 2 to 3 ears

small can green chilies

can diced tomatoes

garnish: shredded cheese and tortilla chips

 

Instructions:

  1. Saute onion and garlic in butter or olive oil; add seasoning

  2. Add 4 cups chicken broth (leaving out 1 cup)

  3. Mix flour into remaining 1 cup of broth and add to the pot

  4. Add chicken, corn, green chilies, black beans  and tomatoes; simmer until hot and serve with cheese and tortilla chips
