Chicken Stir-Fry
Ingredients:
2/3c chicken broth
3T soy sauce
2T cornstarch
2T honey
1lb chicken (or pork tenderloin)
mushrooms
onion
1T ginger
2 cloves garlic (minced)
snap peas
red bell pepper (chopped)
celery
baby corn cobs
water chestnuts

Serve with Cashew Rice (Recipe Here)
Instructions:

Combine broth, 1T cornstarch, 2T soy, & honey and set aside

Combine chicken, 1T cornstarch, 1T soy, and toss to coat

Stir-fry chicken in oil and remove from pan

Add more oil and sauté mushrooms and onions. Add ginger and garlic. Add peas, peppers, corn cobs, water chestnuts and cashews.

Add meat back in with reserved broth (#1); simmer until thick and serve with rice
