Chicken & Rice Soup

Ingredients:

olive oil

butter

1 cup celery, diced

1 cup carrots, diced

1 cup onion, diced

salt, pepper

cayenne

1/2 tbl herbs de provence

1 tbl flour or 1 tsp cornstarch

1 can cream of mushroom soup, undiluted

4 to 5 cups chicken broth

2 cups cooked wild rice

rotissarie chicken

​Instructions:

  1. Saute celery, onion and carrots in a splash of olive oil and butter. When they begin to soften, add seasoning.

  2. Add chicken broth and cream of mushroom soup. Simmer 5 to 10 minutes.

  3. Pull out about 1/2 cup of broth and add 1 tbl of flour or a tsp of cornstarch and whisk. Drizzle back into soup.

  4. Add rice and chicken and bring to simmer and serve.
