Chicken Ramen Soup

Ingredients:

1 Tble butter

olive oil

1 medium onion, chopped

3 stalks of celery with leaves, chopped

2 cloves of garlic, minced

1 inch fresh ginger minced

salt, pepper and cayenne

8 cups chicken broth

rotisserie chicken in bite size pieces 

sliced mushrooms

1 tsp soy sauce

1 tsp sesame oil

splash of fish sauce

snow peas

baby bok choy

3 pkgs dried ramen noodles (discard seasoning)

Optional: bean sprouts or scallions for topping

Instructions:

  1. Melt butter with a couple of turns of olive oil over med-high heat in a dutch oven. Saute onion and celery until softened, add seasoning, ginger and garlic and cook for just about one minute.

  2. Add chicken broth, soy sauce, sesame oil and fish sauce and bring to a boil. Add chicken, mushrooms, peas, bok choy and ramen noodles. 

  3. Reduce heat and cook until noodles are softened and serve.
