Chicken Lentil Soup

Ingredients:

butter

onion, diced

celery, diced

carrots, sliced

salt, pepper, cayenne

1 1/2 tsp herbes de provence

1 tbl flour

1 1/2 cup cooked lentils & beans

5 to 6 cups chicken broth

1 1/2 cup rotisserie chicken

3/4 cup heavy cream or whole milk

Instructions:

  1. In soup pot: sweat down the onion, celery and carrot with butter.

  2. Add seasoning, stir until well combined.

  3. Add flour and stir until well incorporated.

  4. Add broth, cream, chicken and lentils and simmer for 15 to 20 minutes until carrots are tender.
