Chicken & Barley Soup

Ingredients:

olive oil

1 tbl butter

2 carrots, diced or sliced

2 stalks celery, diced

1/2 large onion, diced

2 cups savoy cabbage, chopped

4 cups chicken stock

2+ cups cooked chicken

1/2 cup quick-cook barley

salt, pepper and cayenne

Instructions:

  1. In a dutch oven, sweat out onion, celery, carrots in olive oil and butter.

  2. Add garlic, salt, pepper and cayenne.

  3. Add broth, cabbage, chicken and barley.

  4. Simmer for 10 to 15 minutes until barley is tender.
