Breakfast Skillet

​Ingredients:

frozen hashbrowns

sausage

tomatoes

jalapenos

bell peppers

pepperjack cheese

egg

cilantro

tortillas

Instructions:

  1. Brown and crumble sausage. Remove from pan and drain on a paper towel.

  2. In the same pan, add a little olive oil and saute bell pepper, tomato and jalepeno until just softened. Remove from pan.

  3. Add a little olive oil and butter to the bottom of the pan and add hashbrowns. Flip when toasted on the bottom; add sausage and veggies. 

  4. Top with two or three eggs (cheese if you want) and cover to cook. 

  5. Top with salt, pepper and cilantro. Serve with tortillas.
