Cauliflower Fried Rice

How to prepare riced cauliflower: 

  1. With a food processor - cut florets into chunks and pulse until it becomes the size of rice.

  2. With a kitchen grater - cut a head of cauliflower into four large chunks and using the medium side, grate it into rice size pieces.

  3. You can also buy pre-riced cauliflower in the freezer section.

Ingredients:

cauliflower; riced (see below)

scallions, cut on diagonal

peas or asparagus

egg

garlic, minced

fresh ginger, grated (a little goes a long way)

soy sauce

fish sauce (optional)

chicken or shrimp

 

Instructions:

  1. If you are using a protein, prepare it and set aside.

  2. Scramble eggs and set aside.

  3. If you are using asparagus, saute that at this point, when they are just getting tender, add scallions, garlic and ginger .

  4. Add more oil then mix in cauliflower rice (and peas if you are using those instead of asparagus); saute until softened.

  5. Add egg and chicken (or other protein) back into the pan.

  6. Drizzle with soy sauce and taste for seasoning. Add pepper, salt and cayenne as desired.
