Cauliflower Dishes

CAULIFLOWER STEAKS WITH BROWN BUTTER NUTS

Ingredients:

1 large head cauliflower

2 T butter

1/4 cup shelled pumpkin seeds or pepitas

1/2 tsp red pepper flakes

1/4 cup chopped cilantro

1 T fresh lime juice

Instructions:

  1. Coat baking sheet with olive oil.

  2. Cut cauliflower into 1/2 inch steaks

  3. Place on baking sheet and drizzle with more olive oil, season with salt and pepper

  4. Roast at 400 degrees for 20-25 minutes, turn and roast another 15 to 20 minutes. 

  5. Melt butter over medium heat and add pepitas, bring to a simmer and cook until seeds are toasted and butter is browned.(5 to 6 minutes)

  6. Remove from heat, add red pepper flakes and let cool. 

  7. Add cilantro and lime juice, season to taste

  8. Drizzle butter/nut mixture over cauliflower steaks and garnish with cilantro.

CHEESY CAULIFLOWER BAKE

Ingredients:

1 large head cauliflower

5 T butter

1/2 cup heavy cream

2 cloves garlic, minced

1 1/2 cup white cheddar, grated

3/4 cup fresh Parmesan, grated

salt, pepper and cayenne

Instructions:

  1. In salted boiling water, cook cauliflower florets until tender and drain.

  2. Butter baking dish, add half of the cauliflower and half of the heavy cream

  3. Dot the top with half of the butter, garlic and cheese

  4. Repeat with remaining ingredients.

  5. Bake at 400 degrees for about 30 minutes.
