Cauliflower Dishes
CAULIFLOWER STEAKS WITH BROWN BUTTER NUTS
Ingredients:
1 large head cauliflower
2 T butter
1/4 cup shelled pumpkin seeds or pepitas
1/2 tsp red pepper flakes
1/4 cup chopped cilantro
1 T fresh lime juice

Instructions:

Coat baking sheet with olive oil.

Cut cauliflower into 1/2 inch steaks

Place on baking sheet and drizzle with more olive oil, season with salt and pepper

Roast at 400 degrees for 20-25 minutes, turn and roast another 15 to 20 minutes.

Melt butter over medium heat and add pepitas, bring to a simmer and cook until seeds are toasted and butter is browned.(5 to 6 minutes)

Remove from heat, add red pepper flakes and let cool.

Add cilantro and lime juice, season to taste

Drizzle butter/nut mixture over cauliflower steaks and garnish with cilantro.

CHEESY CAULIFLOWER BAKE
Ingredients:
1 large head cauliflower
5 T butter
1/2 cup heavy cream
2 cloves garlic, minced
1 1/2 cup white cheddar, grated
3/4 cup fresh Parmesan, grated
salt, pepper and cayenne

Instructions:

In salted boiling water, cook cauliflower florets until tender and drain.

Butter baking dish, add half of the cauliflower and half of the heavy cream
-
Dot the top with half of the butter, garlic and cheese
-
Repeat with remaining ingredients.

Bake at 400 degrees for about 30 minutes.
