Caramelized Pork Medallions

Ingredients: 

1 pork tenderloin

olive oil

4 garlic cloves, minced

4 Tbl brown sugar

2 Tbl orange juice or water

2 Tbl molasses

Instructions:

  1. Cut pork into 8 pieces; pound to 1/2 inch thickness.

  2. Heat olive oil in skillet and brown pork on both sides. set aside

  3. In the same skillet, saute garlic in a little olive oil for just a minute, then add remaining ingredients.

  4. Add pork and coat well. Cook uncovered until internal temp reaches 145 degrees - 3-4 minutes

  5. Rest 5 minute. Best served with roasted squash.
