Caramel Bars

Ingredients:

For Crust:

1 cup butter softened

3/4 cup brown sugar

1 tsp salt

2 cups flour

For Caramel:

2 1/3 cup white sugar

1 cup white syrup
1 1/2 sticks of butter

1/2 can sweetened condensed milk

1/2 tsp vanilla

1/2 tsp vinegar

For Topping:

2 cups of roasted salted cashews

Instructions:

For Crust

  1. Prepare a 9x13 pan with parchment sling using two sheets of parchment paper. Coat the paper with cooking spray

  2. With mixer, mix butter and brown sugar and salt until well combined

  3. Add flour, first with mixer and then finish with a wooden spoon.

  4. Press into prepared pan and bake at 350 degrees for about 20 minutes

For Caramel:

  1. Cook sugar and white syrup to soft ball stage over medium heat (235 degrees)

  2. Add butter and sweetened condensed milk and cook on low heat to hard ball stage stirring constantly (255 degrees)

  3. Remove from heat and add vanilla and vinegar

  4. Pour over prepared crust  - only use enough to cover the crust, reserving the rest for another use...maybe over ice cream?​

  5. Top with cashews and allow to cook completely, remove from pan with parchment sling and cut into bars.
