Buttery Tilapia

Ingredients:

tilapia filet

butter

citrus zest; lemon, grapefruit, orange or, my fav...lime.

salt, pepper, old bay seasoning, cayenne

Instructions:

  1. Rinse fish in cool water and pat dry. 

  2. Season on both sides.

  3. Add butter in fry pan and add fish when butter is bubbly.

  4. Cook fish about 4 minutes on each side - add more butter as needed.

  5. Remove fish and add 1 more tbl of butter and citrus zest to the pan; simmer until butter is just browned.

  6. Pour butter over fish and garnish with more zest.
