Breakfast Potatoes

Ingredients:

1 potato cut into cubes

1/2 green bell pepper, chopped

1/2 red bell pepper, chopped

1/2 white onion, chopped

2 cloves of garlic minced

olive oil

butter, melted

salt, pepper & cayenne

1 egg

Instructions: 

  1. Spread out potatoes on baking sheet and toss with olive oil, seasoning and melted butter.

  2. Bake in 500 degree oven for 15 minutes.

  3. Reduce temp to 400

  4. Toss peppers, garlic and onion lightly with olive oil, salt and pepper.

  5. Bake for another 20 minutes until potatoes are tender and veggies are softened.

  6. Top with a fried egg
