Breakfast Potatoes
Ingredients:
1 potato cut into cubes
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/2 white onion, chopped
2 cloves of garlic minced
olive oil
butter, melted
salt, pepper & cayenne
1 egg

Instructions:
-
Spread out potatoes on baking sheet and toss with olive oil, seasoning and melted butter.

Bake in 500 degree oven for 15 minutes.

Reduce temp to 400
-
Toss peppers, garlic and onion lightly with olive oil, salt and pepper.
-
Bake for another 20 minutes until potatoes are tender and veggies are softened.

Top with a fried egg
