Breakfast Pizza
​Ingredients:
sausage
pizza dough, at room temperature
fresh broccoli florets; blanched
shredded cheddar & mozzarella
eggs
crushed red pepper flakes for serving

Instructions:

C​ook sausage and drain on paper towel; reserving drippings.

Blanch broccoli by first putting into boiling water for about 2 minutes; then into an ice bath to stop cooking

Put broccoli in a bowl and pour 2 T of sausage drippings over it; season with salt

Dust a work surface with a little flour and roll out dough until you have a round about ¼-inch thick and 12 inches across. (smaller for individual pizzas)

Place the dough on a parchment lined cookie sheet or pizza stone and bake at 400 degrees for 5 minutes.

Remove pizza and add toppings; eggs can be scrambled (leave a little runny) or crack an egg right on top for a sunny side up egg

Bake again until the pizza is browned and crisp on the bottom, the egg whites are set and the yolks are still runny, about 5 minutes.

Let pizza to sit for 2 minutes to allow the eggs to set. Slice and serve with crushed red pepper flakes.
