Black Bean Soup

Ingredients:

1/2 cup fresh tomatoes, diced

1/2 cup onion, diced

1/2 cup jalapeno, diced

2 cans black beans

2 cup chicken or vegetable broth

1 tsp cumin

To garnish: fresh cilantro and tomato, onion and jalapeno

Instructions:

  1. In heavy soup pot, saute tomatoes, onion and jalapeno in a splash of olive oil. Season with salt and pepper.

  2. Rinse black beans and add them to the pot along with broth and cumin.

  3. Bring to boil.

  4. Using an emersion or stand along blender, puree the soup. Return to pot and warm through. Add more broth as necessary.
