Ingredients:

3 shallots, sliced thin

6 tbl butter

 shrimp or beef

2 tsp ginger, grated

2 cloves garlic, minced

2 tsp curry powder or paste

1 tsp garam masala

1/2 tsp smoked paprika

6 cups cooked basmati rice

cilantro

toasted cashews

Instructions:

  1. Cook rice and set aside

  2. If using beef, cut in bite-size pieces and brown in butter. Set aside.

  3. Sautee shallots in 1 tbl butter

  4. Combine 5 tbl melted butter with ginger, garlic, curry, garam masala, paprika and some of the cilantro.

  5. Spread the rice on a deep baking dish. Top with shrimp or beef and pour butter over it all. Add 1/4 cup water and cover with foil. 

  6. Bake at 400 degrees for 15 to 18 minutes; until rice is hot and shrimp is cooked.

  7. Toss to fluff and add more cilantro and cashews.
