Breakfast Stuffed Mushrooms

​Ingredients:

cremini mushrooms

eggs

bell peppers

jalepenos

onion

(add whatever you would to an egg scramble: cheese, mushrooms stems, bacon...)

​

Instructions:

  1. Clean and de-stem mushrooms and set aside.

  2. Whisk eggs with a fork and add chopped up bell peppers, jalapenos and onion. Salt and pepper.

  3. Pour egg mixture into a skillet and cook to a soft stage.

  4. Fill mushrooms with egg mixture and bake at 350 degrees for 15 to 20 minutes.
