Beef Stroganoff

Ingredients:

olive oil

butter

1 1/2 lbs of stew meat in bite size pieces

2 cups cremini mushrooms, sliced

2 cloves garlic, minced

1 onion, chopped

2 cups beef stock

2 tbl soy sauce

2 tbl grainy mustard

1 tsp anchovy paste

extra wide egg noodles

1/2 cup sour cream

2 oz cream cheese

Fresh parsley to garnish

Instructions:

  1. Start to heat a pot of salted water. (Prepping it for pasta)

  2. Separately, in a large dutch oven, brown meat in a little olive oil and butter. Set meat aside.

  3. In the same pot with a little more butter, add mushrooms and onion and cook until translucent.

  4. Add garlic, seasonings and anchovy paste, cook til fragrant.

  5. Add - to onion and mushrooms - beef stock, soy sauce, mustard and meat and simmer.

  6. Drop pasta into boiling water and cook until al dente, drain and add some butter, salt & pepper.

  7. Add sour cream and cream cheese to meat mixture and stir until smooth and creamy.

  8. Top pasta with meat mixture and garnish with parsley.
