Asian Pork Noodle Soup

Ingredients:

1 lb boneless pork loin

(or precooked roasted chicken)

olive oil

2 cloves chopped garlic

2 tsp grated gingerroot

4 cups chicken broth

2 cups water

2T soy sauce

4 oz  fine egg noodles

1 med carrot, shredded or julienned

1 small red bell pepper, chopped

1 cup spinach leaves

1 cup basil

Instructions:

  1. In soup pot: cook pork, garlic and gingerroot in olive oil until pork is browned (does not need to be fully cook at this point)

  2. Stir in broth, water and soy sauce. Heat to boil and reduce. Simmer uncovered 5 minutes

  3. Stir in noodles, carrot and bell pepper. Simmer about 10 minutes

  4. Stir in spinach and basil. Will be ready to serve in 2 to 3 minutes
