African Groundnut Stew

Ingredients:

1/2 onion, chopped

2 stalks celery, chopped

1 tbl gingerroot

1 tbl tomato paste

1 tsp red curry

salt, pepper, cayenne

1/4 cup peanut butter

14 oz can diced tomatoes

1 1/2 cups chicken broth

1 red potato, diced

1 small sweet potato, diced

rotisserie chicken

tri-color couscous

Instructions:

  1. Sweat out onions and celery in a little olive oil and butter.

  2. Add gingerroot, tomato paste and curry and cook another minute or so.

  3. Add broth, tomatoes, peanut butter and seasoning; bring to a boil.

  4. Add potatoes and chicken. Simmer 15 to 20 minutes until potatoes are tender.

  5. Cook couscous according to the package and use to garnish stew.
